We want to ensure our chocolates are of the finest quality so we currently use C

allebaut couveture for all of our handmade chocolate products.
All the way from Belgium to New South Wales, Australia
Belgian chocolate is some of the finest and most luxurious chocolate you can source, and Callebaut makes couverture that is used by the top chocolate makers all over the world. Callebaut has been in business for over 100 years and still selects, roasts and grinds it’s own cocoa beans to make the highest quality cocoa butter. This ensures that their standards are preserved. Very few chocolate companies can say the same in this day of mass produced and highly manufactured confectioneries.
Deeper cocoa flavour for high quality chocolates
While many companies will take the cacao beans out of their shell, Callebaut opts for roasting them within. The shell helps to protect the beans, meaning that there are better aromas and a deeper flavour within the finished product. The ingredients are also ground until extremely fine to create what’s known as cocoa mass, before pure cocoa butter and vanilla are added in the finishing stages to give you that amazing ‘melt in the mouth’ feeling that only fine couverture can produce.
Sustainably sourced
Supporting the farmers to grow the cacao sustainably is another important aspect of the Callebaut business model. This means supporting farmers through programs on the ground. These include working with cacao growers on sustainable farming practices and growing better crops, helping farmers to increase their income and build up local communities through the support of greater access to healthcare, clean water and education. By buying our couverture from a company who sources their raw materials in this way as part of our supply chain, we also support those ideals.
