FAQs

chocolate-hazelnut bon bon or pralineDo you use couverture?

Yes, we only use high quality couverture for our handmade products.  High quality chocolate contains a larger percentage of cocoa butter and this gives our products their luscious creamy flavour.

Do you use Fairtrade Certified chocolate?

As we make our chocolates to order, you can request Fairtrade Certified chocolate. The type of chocolate we use for your order will depend on your budget and what type of chocolate (dark, milk, white) you like best. Our goal is to use sustainable products when our clients needs make that possible.

Can I order a gift voucher?

The perfect idea for that someone who has everything. Buy them a gift voucher and we will work with them to design their own special chocolate. Gift vouchers start from $50 and are valid for 12 months from the date of purchase.

How do I store my chocolate?

If you can resist eating your chocolate all in one go, then the best way to store  chocolate is in an airtight container. The container should be kept in a dry place ideally with temperatures that don’t exceed about 20 degrees celsius or or go below about 12 degrees. Avoid direct sunlight and other foods that have a strong smell.

If you live somewhere In Australia where this just won’t work, then while we don’t recommend placing chocolates in the refrigerator, still place them in an airtight container, wrap them in plastic wrap and then put them in the fridge.  Chocolate is best eaten at room temperature and not too cold, so make sure you take them out of the fridge a couple of hours before you want to eat them.

Our chocolates are made fresh and like most fresh products should be eaten soon after they are made – as a general guide, usually within two weeks is best.  Products that contain fresh cream or butter have a shorter shelf life so if you need chocolates that will last a bit longer, let us know via our contacts page and we will recommend a suitable product.

My chocolate has turned white – what happened?

This can happen when chocolate gets too warm – see our FAQ on How do I store chocolate?

What you are seeing is the cocoa butter in the chocolate separating from the other ingredients and becoming visible. Never fear – you can still eat the chocolate!
